National Brownie Day celebrates that amazing confection that incorporates the best features of cookies and cakes. It’s believed that the basic brownie was created by the pastry chef at Chicago’s Palmer House Hotel in 1893 when the owner asked for a special treat to serve visitors attending the Chicago World’s Columbian Exposition. The dessert was to be packed in box lunches, therefore it had to be small, tasty, and durable enough to withstand transportation. The original recipe included nuts and an apricot glaze.
